I cook this recipe at home where my family loves it. How glad I am as they requested this during family get together. This is their favorite among recipe I cook. Why I called this Antonio’s recipe? I got this recipe from my father named Antonio who taught me of how to cook this kind of dish. The most delicious afritada I taste. It’s not that because my dad cooked it but it has an incomparable taste which I love it most. A magic touch of secret ingredients that it can take away your stress while eating this with plain rice. Antonio’s Chicken Afritada Recipe


INGREDIENTS:


1 kilogram of chicken, Cut into serving pieces


2 tablespoon soy sauce


5-6 medium potatoes cut into cubes


3 medium carrots cut into cubes


½ teaspoon ground pepper


2 tablespoon cooking oil


6 cloves garlic


2 medium onions


1 and ½ -2 cups water


2 red bell peppers


2 bays leaf


1 chicken broth cubes


½ teaspoon of monosodium glutamate


1 teaspoon of salt


 1 tablespoon brown sugar


PROCEDURE:


  1. Heat cooking oil in the casserole, sauté the onion and garlic until it turns light brown color.

  2. Add the Chicken and sauté until it cook tender. Add red bell pepper, bay leaf, salt, monosodium glutamate, ground pepper, soy sauce and simmer for 5 minutes until the seasoning absorbed to chicken.

  3. Add potatoes, carrots and water. Let it simmer until the vegetables are tender and smooth then add broth cub, tomato sauce and sugar,then stir.

  4. Mixed together thoroughly. Add sugar and salt if necessary or base on your taste preferences. Simmer for 20 minutes until the sauce is thickened.

  5. Remove the casserole from heat and transfer it into the bowl and serve it while hot with plain rice.

Special Roasted Turkey


INGREDIENTS


1 15 pounds of turkey


1 cup of water


3 pieces of chopped carrots


3 cloves of minced garlic


1 stick of butter


Onion powder


3 stalks of chopped celery


2 chopped onions


pepper


salt


Special Roasted Turkey


PREPARATION



  • Pre-heat your oven into 260 Celsius.

  • Remove the giblets and gizzard from the turkeys inside.

  • Clean, rinse and dry the turkeys outside and cavity.

  • Lather the turkey with ½ stick of butter and so as under its skin.

  • Sprinkle with onion powder, salt and pepper over the lathered butter.

  • Rub the seasoning all over the outside part of the turkey’s body.

  • Put all the remaining butter inside the turkey’s cavity.

  • Put 1 chopped onion and 3 cloves of minced garlic. Pour a cup of water on the roasting pan and add the remaining onions, carrots and celery.

  • Roast the turkey for 20 minutes or until it is already golden brown.

  • Reduce the oven temperature to 175 Celsius then continue to roast.

  • Baste turkey every 25 minutes with liquids in the bottom of the pan.

  • Once the thermometer is stuck into thickest part of the bird and the reading is between 70 to 75 degrees Celsius, that’s the indication that the turkey is done.

  • Cooking time usually take 3 hours and a half but make sure to use a thermometer for a better output.

  • Remove the turkey and set for 15 minutes. Serve and enjoy!

Special Roasted Chicken Recipe


Roasted Chicken for Thanksgiving


INGREDIENTS


For the Chicken


6 pcs of peeled shallots, cut in halved


1 tbsp. of olive oil


1 head garlic, cut in half


2 tsp. of salt


Ground black pepper


1 whole chicken, cut into pieces


Butter


In making the sauce, you need the following:


2 cups of low-sodium chicken stock


1½ tbsp. of Dijon mustard


1 tbsp. of butter


 


In making the Herb Butter, you need the following:


5 pcs. of 2-inch sprigs of thyme


1 pc. of 2-inch sprig rosemary


5 pcs. of fresh sage leaves


1 peeled and well- chopped shallot


Lemon zest


1 tsp. of fresh honey


3 tbsp. of unsalted butter

PREPARATION



  • Preheat the oven into 450 degrees.

  • Make the herb butter first by pulling the herbs from steps and chop it very well. Get a medium-sized bowl and combine the following and blend it: chopped herbs, lemon zest, honey, shallots and butter. Set aside after blending.

  • In a roasting pan, put the shallots and garlic and toss with olive oil. To make the chicken skin crisp more, pat the chicken using paper towels. Rub the chicken well with herb butter using a spoon and sprinkle it with salt and fresh pepper.

  • This time, put the chicken in the oven and roast it within 40 minutes. After it, change the temperature into 375 degrees and continue to roast within 20 minutes or until you see it turns brown until done.

  • In a flat plate, transfer the chicken and shallots then cover it with foil. After that, pour the fat on the bottom of a pan then leave the brown bake-on bits. In a medium-high heat stove, put the chicken stock, let it boil and put it with mustard. Mix the brown bits and stock and cook it until its liquid would reduce by half. Turn off the heat and stir it with some butter.

1 package of spaghetti


2 cups or 16 ounces of cottage cheese


1 pound of ground beef


4 cups or 16 ounces of shredded mozzarella cheese


1 chopped onion

1 jar spaghetti sauce, meatless


1/2 tsp. of seasoned salt


5 tbsp. of melted butter


Preparation



  • Cook the spaghetti base on the directions indicated on its package. Drain after cooking.

  • In a skillet over a medium high heat, cook the beef together with the onions until it is no longer pink, drain. Meanwhile, stir in the spaghetti sauce and salt.

  • In a medium-sized bowl, whisk the fresh eggs, melted butter and cheese. Add the spaghetti to egg mixture then toss to coat.

  • In a 3-quart baking dish, put the half of spaghetti mixture. Sprinkle its top cottage cheese, mozzarella cheese and meat sauce. Repeat the process for additional layers.

  • Cover it and bake for 30-40 minutes at 350°. Remove the cover and bake it again for 20 minutes until cheese the cheese are well-melted.

Spicy Chicken Penne

Welcome to another recipe, the Spicy Chicken Penne. Have you ever taste a spicy Penne? If not yet, then here’s the best spicy recipe of Penne that I’m sure, you fall in love this recipe. This spicy Chicken Penne is one of the continental’s recipes which are Asian people’s favorite. I cook this for my Korean son in-law who loves hot and spicy but he only tastes spicy spaghetti of mine. On his birthday I cook this Spicy Chicken Penne for him because I can sense that he will like it and yeah I’m right! I teach my daughter the procedures in this ingredient. So I will also teach you for you to experience this kind of recipe.


Chicken Penne 4


Spicy Chicken Penne Ingredients:


2 tablespoons annatto oil


1 tablespoon garlic, chopped


¼ cup onions, chopped


1 cup tomatoes, chopped


1 cup shredded chicken breast fillet


¼ cup chili sauce


1 small can liver spread


1 cup artificial seasoning powder


1 cup water


1 pack 250 ml all-purpose cream


Pinch of pepper to taste


250 grams penne, cook al dente

PROCEDURES:


For Penne:


Simmer the Penne for 15 to 20 minutes or until it cook. Drain and place in the large bowl.


  1. In a large saucepan, heat the butter. Sauté the garlic, onions and tomatoes until the onion is caramelized and the tomatoes separate on its skin.

  2. Add chicken and sauté with the garlic, onions, and tomatoes together until the chicken cook or it turn its color into light brown.

  3. Add the chili sauce and liver spread. For additional taste, add the artificial seasoning powder and let it cook for about 2 or 3 minutes.

  4. Pour the 1 cup of water into a pan and let it boil. Turn the fire into a low heat temperature then pour the all-purpose cream. Add a pinch of pepper to taste spicier and pepper adds aroma in ingredients.

  5. Mixed thoroughly in cooked penne until it coated together.

Preparation time: 20 minutes


Cooking time: 30 minutes


This kind of recipe has an aroma of spicy and a combination of saucy penne with a unique taste. This will serve as snacks or serve for any occasions. INGREDIENTS:


1 and a half pound ground lean pork


½ pound ground pork fat


For marinating:


1 tablespoon table salt


½ cup sugar


1 whole of garlic, minced finely


3 tablespoons vinegar


1 tablespoon soy sauce


1 teaspoon ground pepper or crashed ground peppercorn


¼ teaspoon red food coloring


4×2 inch wax paper for wrapping


Cooking oil for frying

PROCEDURE:


  1. Mix first the marinade thoroughly then add the ground meat.

  2. Massage the mixed ingredients, to absorb marinating with the meat, refrigerate it overnight.

  3. Put 3 tablespoon of longganisa mixture into the “4×2” wax paper and roll it for about 3 inches long and refrigerate it.

  4. There are 2 ways of cooking of this Filipino Pork Longganisa or Pork Sausage Recipe.
    1. Use 3 tablespoon of water, let it cook with its own oil or until the water went out. Flip each side for balance cooking.

    2. When using oil, fry the longganisa using the medium heat fire.

    3. Serve with your hot fried rice, a sunny side up egg or beef steak.

It has a different size after and before cooking. It looks bigger before cooking it and it shrinks when it cooks after. In making this recipe, make sure that you can balance the lean meat and the fat meat. Because when it is too much fat, your longganisa is too greasy. Much better to have a half of lean meat and half of fat so it can be a meaty and juicy your longganisa is. When it too much meaty, it cause rubbery and dry.
