3 1/2 pounds pork shoulder roast, room temperature
2 tart apples, peeled and quartered
3 sprigs fresh rosemary
3 tablespoons Dijon mustard
1 tablespoon olive oil
1/2 cup dry white wine
5 cloves garlic, peeled
Salt and pepper
Here’s how:
- First, spread the pork roast with the mustard and roast in the bottom of a 5 liter or larger pressure cooker over a medium heat until brown. Once done, you can now remove the meat and pour out excess fat.
- Deglaze the pan with the white wine and make sure to scrape up the brown bits. Then add in the apple, garlic, salt and pepper to taste.
