Fish Escabeche Recipe

Fish escabeche is a famous recipe in Latin America, Spain, Catalonia, Portugal, Philippines and other Asian countries. It is a fried fish that is marinated with an acidic mixture before serving. It has a sauce that is composed of several spices that soothes in the fish that makes it tastier and satisfying.


At first I thought this recipe is just the same with usual fish recipes but the moment I tasted it, I know that it is something different. No matter what kind of fish you’re gonna use, as long as the fish is perfectly fried and the sauce is perfectly made, you will surely have the best fish escabeche!


Since I’m listing some recipes this coming Christmas, I would like to share to you this recipe so you may also try it and discover it by yourself the real goodness of this recipe brings! So take a look at the ingredients and simple instructions I listed below so you can start preparing your kitchen to cook another quick and delectable fish recipe.

Fish Escabeche


Ingredients


1 kilo of cleaned fish (lapu-lapu, tilapia, mackerel or any fish)


1 tbsp. of corn starch, dissolved it in 1/2 cup of water


1 thumb-sized ginger, sliced thinly


1 red and green bell pepper (thinly sliced)


1 carrot, (thinly sliced)


3 tbsp. of brown sugar


1 large chopped onion


4 cloves crushed garlic


1 cup of cooking oil


2 Fresh sliced tomatoes


1 cup of vinegar


1 tsp. of salt


 


Procedures



  • Season the fishes with salt.

  • Heat the oil in frying pan and fry the fish until golden brown. Do both sides.

  • Place the fish in a place. Set aside.

  • Using the same pan, remove the used oil and place with new one and heat it..

  • Saute the garlic, onion, ginger then add the carrots, bell peppers and tomatoes.

  • Pour the sugar, vinegar and dissolved corn starch.

  •  Season with salt and pepper then cook until the sauce thickens.

  • Add the fish and cook for 3 another minutes. Serve and enjoy!
